recipe thread HERE

Here are my notes: cloudy copper colored pour with a fluffy off-white head that disipated into a thin film that clung a bit to the sides of the glass. The nose was faintly sweet with a hint of wild berries...as in, not huge in the aroma department. Had to take a close whiff to get in there and pick out some notes. The beer is medium bodied, offers a slightly sweet and toasty initial flavor up front, and that is followed with touches of lemon and wild berries. That is while the beer is still cold. As it warmed up, the flavors did not really change or evolve...they just flip-flopped. Interesting! So it isn't a bad effort (definitely drinkable), but I think the recipe can stand some tweaking

Looks good! Makes me thirsty for a pint of bitter.

If you can get your hands on a nice English yeast, I think it would be a good tweak.

yeah, I agree. the next attempt at a bitter is going to look a bit different. I'm thinking all MO as a base, a little c-70 and c-120 to add some depth, and a combo of challenger and fuggles. keep everything 100% british! also use either the London ESB wyeast strain...or maybe the S-04 (if I make it sooner rather than later)

Challenger is a very interesting hop. Used it in an EngIPA. I think it might be good as a solo hop in an OB.

S-04 will do a good job, but the 1968 yeast is friggin' amazing for getting a clear beer right quick.

It just gets lazy and sometimes drops out early (especially if your temps drop, even a little), so if you bottle, you may end up with overcarbed beer as it wakes up from the bottling process and finishes off the beer AND your priming sugar.

I heard that about the 1968 too. if it drops early, is it as simple as warming it back up and gently rocking the fermenter?

I never had priming issues when 1968 flocc'd out early.
I just figured it was done. It had great flavor though and next time I'm able to get some I will. And probably harvest it for future batches. Good stuff!

I prefer to rack it...or just keg it and not worry.

But the trub is like concrete...just rocking it won't get a lot of the yeast back in suspension. You might need to use a sanitized spoon to get at it.

And if you have good temp control, you should be fine...but if you're fermenting on the cool side and temps drop just a couple of degrees, it can flocc out early.

That said, I think it keeps chewing through sugars even when it's sitting on the bottom of the fermentor...so even if it's clear, it might still drop a couple more points.
