I have a catalog from a company called The Home Brewery that not only offers a really great selection of home brewing equipment for the home beer brewer and the home wine maker, there catalog is jam packed with really great tip hints and suggestions. Even if you shop at a local home brew shop, I would recommend going to THB's website at http://www.thehomebrewery.com and requesting a catalog.

Anyway, here are there top 10 tips for better home brew beer.

10. Always boil hard! A gentle simmer isn't as good as a rolling boil for clarity and flavor.

9. Keep the lid of the pot handy, but don't use it unless you have to. Never cover the pot more than 2/3 , as there needs to be some evaporation.

8. Watch out for boil-over! Not only is it a BIG mess, but it can change the way your beer tastes if you lose a lot of stuff.

7. Be sure to sanitize EVERYTHING that is going to touch your beer. You can't be to clean.

6. Chill quickly! It will help give you clear beer and reduce the chances of contamination if you cool fast.

5. Aerate well when you pitch your yeast. This is the only time when air is good, it will help give you the edge against spoilage.

4. Try to maintain a steady fermentation temperature; fluctuations can cause problems.

3. Use all malt, it makes better beer! There are only a few styles that require sugar, but stay away from recipes that are mostly sugar.

2. If you are going to do one thing to improve your overall beer quality, use a liquid yeast, They cost a little more but the results can be fantastic.

1. Be patient! While your beer will be carbonated in about 2 weeks, almost all home brewed beers will improve with age.

Cheers and Happy Brewing!

You should modify those a bit and make a poster called "Brew Law" or something of that effect. That way, brewers around the world could have that poster in their kitchen and every time the wife looks at it, she is reminded that she did, indeed, marry a man who LOVES BEER!

They had to dump them when they started putting fruit in their beer. ;\)

AB just put out an Extreme Berry Beer. Haven't seen it on the shelves, just read an article about it.

Great set of rules . As for as AB what makes them think that they can pull off a fruit beer when they cannot produce a simple quality beer . If it is anything like Bud with a fruit taste you will still need some asprins on hand for that killer head ache .

They stop taking request for catalogs.

I got this pager...

We're very sorry!
At this time we are not taking any more requests for printed catalogs. This is a temporary situation and we will turn this feature back on when the new catalogs arrive from the printer. In the mean time we hope you can find what you’re looking for in our on-line store. We plan to expand our on-line store very rapidly to include almost everything that was available in our printed catalog. We also plan on adding some very interesting things that were not available before.

Thank you!

And don't forget the antacid of choice while you're grabbing the aspirin.

Every now and then, my wife tries to get me to split a case of Smirnoff ice or the mich ultra pomegranate, the pH of my stomach drops a full point just thinking about it.

I couldn't agree more. I haven't tried the Pomegranate, but anything like those Smirnoff Ice, Bicardi Silvers and so on... I can handle about the first half of a bottle. After that they just seem way to sugary/sweet and just hurts to finish them. I've been having similar issues when trying this "limed" beers made by the big names. Think the only retail fruit beer I handled well was the Wieinhardt's Blackberry. It's been years since I've tried them though.

Eh like the Dogfish Head owneer says in his book, Its not that they make bad beer, they are just very very good and making bland beer. Add fruit and well, you got a bland beer with a sharp berry twing at the end. should be interesting

If a diabetic coma is something you are looking to try then these malt beers are for you. I can remember in my college days girls would take zimas and put jolly ranchers in them. I could have been a millionaire if I thought mixing massive amount of glucose with a malt lager would result in something humans would consume with passion. I have also heard that even though these are clear liquids, you will puke purple...fascinating:)
