One of the guys at work is paying me to develop a clone of Yellow Snow. It's a seasonal and he's really jonesing. I told him that I couldn't get it 100% (they use Dare and Risk malts... and I'm not that good yet...lol), but I would try.
Here's the info from their site:
Tasting Notes:
Pale golden in color with a hoppy fruity aroma. Big hop flavor up front complemented by medium body and hoppiness mid-pallet. Finishes with a characteristic lingering bitterness.

8 Ingredients:
Cara Foam, Melanoidin & Rogue Micro Barley Farm Dare™ & Risk™ Malts; Amarillo & Rogue Micro Hopyard Revolution Hops, Free Range Coastal Water & Pacman Yeast.

I haven't had this beer in a while but I don't remember it being a 14 (that's why its only 11.) And the alcohol and IBU's are slightly high. Close enough to start with? Anyone have any suggestions that might help me out of the gate?

The guy at work loved the beer. He said it was a 7 or 8 out of 10 (as to how close it was to yellow snow). Not bad for a first try. I haven't been able to find one to do a side by side with, but if I do I'll post.

Second try at yellow snow. Guy said that the first was a little too dark and a little to sweet. He also said that it could possibly use a little more bitterness. I know the numbers don't match uo to what rouge posts, but we'll see how it turns out.
Wanted to mash at 148°, but ended up at 150°. Cooler didn't lose a whole degree during a 75 inute mash! Preheated with 180° water for about 25-30 minutes and covered the mash with foil.
Pitched yeast at 60 where its happily fermenting.

I forgot to post these pics from Christmas.
Second try was much closer. Theirs was much more balanced throughout. Mine was a bit more heavy on the flavor hops. Mine was a little heavier on bitterness and much more aroma but I don't think I'll change those. The color was much closer though mine was much clearer. There is a perceived sweetness that is possibly from the flavor hops, but could be from the pale malt.
So for V3 I'll switch from Pale Malt to plain 2-row and move some of the flavor hops (maybe half) to first wort hoppings.

I like the looks of yours better! and from the sounds of it, I think I would prefer it to the Rouge (wasn't a huge fan of it. seemed like most others...not bad, but didn't stand out) version wink

Brewing this up today. IBUs and alocohol are both a bit higher. Didn't pick up any Revolution hops with my big orders so I had to sub. Williamette would have been my first choice, but I don't have enough extra. Thought about using Hersbrucker...still may...

No I have Columbus, nugget, Goldings (EK), chinook, centennial, hersberker (sp?), and tettnang. I also have homegrown cascades.

Ok last hurdle. I tried to use my auto-siphon since I used whole hops, but it kept getting clogged. Missed my OG by 2 points, and that was with me underestimating my efficiency. I have been around 73%, but this one was 68%. I may tighten my mill a bit or may just ride it out and see how the next batch goes. May work out since my alcohol and IBU's were high. Hydro sample tasted awesome though.

i use one of the small paint strainer bags as a "filter"... that's what i figured out to do after i used whole hops and my autosiphon.

Wow! Color is dead on. I also got it hazy this time; I think that was because of the first wort hops. Theirs has a slight hop sweetness that mine lacks and is slightly more bitter. Mine has a little more hops flavor and alot more aroma, but I can't make an IPA without dry-hopping. Overall I can give it a nine out of ten; I may continue to tweak or may just say close enough.
