Does anyone know a good clone recipe for Carlsberg or Carlsberg Elephant? How would one make a very dry beer like that??

According to Wyeast's website, the Bohemian lager (2124) is a "Carlsberg type" yeast, so that's probably your best bet. It is one of the strains Mr. Beer sells. (If you can't get lager temps, the strain can be used to make a California common fermented in the 65-68F range.)
