Does anyone know a good clone recipe for Carlsberg or Carlsberg Elephant? How would one make a very dry beer like that??

Low mash temp, maybe some simple sugars and definitely a lager yeast.

It's been a long time since I had a Carlsberg Elephant and it's really dry? I remember I liked it but I don't remember it being dry.

According to Wyeast's website, the Bohemian lager (2124) is a "Carlsberg type" yeast, so that's probably your best bet. It is one of the strains Mr. Beer sells. (If you can't get lager temps, the strain can be used to make a California common fermented in the 65-68F range.)

It's been 30 years since I had an Elephant beer when temporarily stationed in Denmark. I drank many an iced mug while there in Jutland. Let us know what you eventually learn.

5.45kg Pilsner Malt
750g White sucrose

Hops:
90min boil - 60g Hallertau
15min boil - 15g Hallertau

Double decoction or 3 rest infusion mash.
Lager fermentation.

Temperature- stepped infusion or double-decoction mash

Mash schedule 50C - 20min
66C - 45min
72C - 45min

Boil time 90min
Racking gravity 1009 2.3 Plato
Alcohol content 7.5% by volume 6.0% by weight
Bitterness 38 EBU
Colour 5 EBC

Ferment and lager as per usual methods

Yeast Wyeast 2042 Danish Lager yeast I suggest

Malt extract version
Replace Pilsner malt with 4200gm of Pale Malt extract
