I have a dream...
...okay I have thought about Mr. Beer partial mashes and not been happy with what I came up with.

But I think I have a better idea now.

Mr. Beer HMEs are available as refills with either booster or UME. My idea is to do a partial mash while not second guessing the hop addition and letting the original flavor profile come through.

My thought is to use a grain bill of 2-2.5 lbs and a small clean bittering hop addition.

I'll update when I find a post holiday deal.

I like to use a complimentary hop. like some hallertau with OVL, or cascade with WCPA for example. added with some 2-row and light crytal = solid!

are you talking about just adding something like CTZ or Warrior to just up the overall IBU level along with a simple grain bill?

I've made a couple of Mr Beer clearance sale PM brews recently (including a 4 gallon batch today), but I sometimes question whether I should.

To me, one of the really nice things about using Mr Beer extracts is that I can make a batch of beer in about a half hour. If I do a PM, that's going to increase my brew time by a couple of hours.

If I'm going to spend that much time brewing a batch, I think it makes more sense to do a PM "from scratch" with an unhopped LME (which I get for $1.80/lb from my LHBS).

The method they use here looks so simple, and alot of what i read about all grain brewing requires a lot of equipment and is somewhat over my head.

The pros of the way they are doing the partial mash this is obviously its simplicity, what would be some of the cons? (mash efficiency, not easy for 5g batches, etc)

Could i do my 1st AG this way making just a 2 gallon batch?

AG doesn't require lots of equipment and it's really easy. Look into BiaB. brew in a bag. you use a $3 paint strainer bag from lowes and a 5 gallon brew pot and just mash in there. A few guys around here do it and it works well.
