you really have everything you need to get started. You can do BIAB or use a smaller pot to heat the sparge water and use the large pot as the mash tun.

I would research BIAB(Brew In A Bag). I have made some GREAT beers using a 30 quart turkey fryer a 5 gallon paint strainer and nothing else.

You will need some type of chiller. An ice bath can take forever to chill the wort. You can make an immersion chiller pretty cheap.

I would make the mash tun, but that is just my opinion. Good luck with making the jump. Make a nice malty stout or porter for your first batch, they are more forgiving with mistakes

Either method works, for me I got tired of worrying around the
kitchen about temps during mashing and scorching the bag.
With the cooler mash tun you pour the hot water in add the grains
stir and forget about it for an hour or so. I prefer the rectangular
over the round cooler.

A rectangular mash tun and a wort chiller.

It stirs easier, does not get stuck sparges plus you can do 10
gallon batches or really big 5 gallon batches.
I bought a long handled bamboo spoon for 3 bucks at an asian
store and it works great as a mash paddle.

Likewise I got a crawfish paddle from HomeDepot and it works great! I would recommend the Weldless Cooler Kit for a rectangular cooler along with a stainless mash/boil screen.
