Never brewed one and not for positive I have ever sampled one so
I looked at a few recipes online and decided they knew not what
they were doing so I invented my own laugh
Ingredients were ordered yesterday, should brew it up in 1-2
weeks.

10 gallons

13.0 lbs Pilsner
.50 lbs Munich
.35 lbs Roasted Barley
.50 lbs Carapils
.20 lbs Crystal 120
.35 lbs Pale Chocolate
.50 lbs Wheat
2 cups Instant Rice on top of mash


.50 oz Saaz @35
.75 oz Saaz @17
1.25 oz Saaz @5
Coopers Ale Yeast rehydrated

Gonna be a bigger version but maybe the judges like it?

Sounds good, but it might have too much flavor for the style.

Not that I know what I'm talking about...I've had the style, but I'm not sure I could tell you anything about it.

What will your fermentation temps be, 65-68°, per your usual?

Oh, and have you thought about doing 5 gallons with another yeast, just to end up with something a little different?

Temps may be less than that depending on what the weather is
like. Currently my brew closet is 60* and the swamp tubs are
57* I do have the option of a small temp controlled space heater
and can heat it way up in there if I needed to for something
else.
I am down to the nitty gritty on yeast. I have a few packs of
coopers, a pack of S 33, a pack ea of 04 and 05, and two packs
of T 58.
I guess I could pitch some T 58 in one batch? or US 05 at those
temps.

Dunno about the coopers yeast at those temps...but I'd guess it'd ferment, just more slowly. But you're the resident coopers expert (I've never even used it!), so I'm betting you'll be fine.

S-33 is really interesting at lower temps...it'll start to throw those novicaine phenols that you get in some Belgians, but I can see T-58 being very interesting at those temps, too.

But maybe try the US-05, and see how it compares to the coopers? Might get some good lager-like character out of it at those temps.

rehydrating and sparge water going.

157° is probably awfully high for the style. I think you're going to end up with a damn tasty beer that's something other than a Dark American Lager.

Maybe something closer to a Vienna lager? But hopefully it'll stand out enough for the judges to notice it, and hopefully they'll score it well. Good luck!

You are dead on correct Jon. It is very risky going with a
malty vesrion. I mashed a little high to compensate for the
coopers that tends to go low and dry.
I will also be topping up in the fermenter and letting it ride
on the yeast for about a month so that should drop out some
of the flavors.
If the first taste test is really out there in space I may enter
it as something else but they say "brew big" so time will tell.

I was going to ask what yeast strain you used. I'm thinking the same thing (mashing a little high) since I still tend to get over attenuation with most brews. I could change up my routine, but that would throw me completely out of whack... not that I'm totally in whack.

I bottled one batch this morning and well uh? it's not near as big
as I thought. In fact it's a little lame and not near dark
enough to be a D.A.L. The pilsner flavor is washing over
everything else it seems. It's gonna be a nice session beer and
like Jon says more of a vienna lager like beer, maybe even a blonde.
Then again the tartness may be covering up some of the malt
flavors, hard to tell sometimes from a flat sample.

So I still have the other bucket and thinking about dumping
some fruit like cherries or peaches or blueberries in there?

The wife said blueberry so today I drained a can of oregon
blueberries, puried them in a sanitized blender and added them
to the bucket fermeter just to wake the yeast up.
In a few days I am going to rack the beer onto some frozen
blueberries in a secondary. So how much? I am thinking 3-4 lbs.
