tiny stout yeast trial

So, I mixed up 5ish gal batch of stout and separated into two mr beers. All extract... Muntons HME, Briess UME.
One batch I am using a safale us-05, the other a safale s-04
I need to see for myself the difference between an english ale yeast and american ale yeast. Both are pushing 1.060 initial gravity.

update Day 9 readings safale 04 English is 1.019 and looks darker and had zero carbonation when it was going into the hydrometer. Flat as a pancake and the reading took two seconds.
safale 05 American is also 1.019 but was very carbonated in the hydro and took quite a while before I could even take a clear reading. A little lighter

bottled it on 1/15. Looked about the same and stayed at 1.019 The English one is looking very tasty.

After two weeks priming, and a couple days in the fridge, initial results. The american is very green. Holds great sustained head. It will be a nice bitter stout when done. The English was barely carbonated, didn't prime. The english are going to warm storage of 70-72 for two weeks to hopefully get carbonated. Both were stored in 58-62 degree storage for two weeks to bottle prime. Will be back in a few more weeks

results time!
So after failing to prime the english yeast, a week at 70 degrees and they primed fine. a few more weeks in the fridge I am ready for results.
American yeast: This was clearer, more carbonated, and less "stout" tasting.
English: After having to up the temp to get it to bottle prime, I will never use an American yeast again for stout. This was wonderful The carbonation held a great head, and it had a cloudier look. The taste was more of a mouthful and mildly bitter. After about 7-8 stout trials with various ingredients, I think I have found a new favorite. This makes me curious what some of the old recipes would have tasted like with an english yeast. Safale s-04, you are my new best friend....us-05, I will see you when the weather gets warm and the light brews are back in rotation
