there is no way they got properly carbed in one day and no, they will not carb at fridge temps. The bottles are supposed to get hard, you just don't want them deforming. Generally my bottles get hard within a couple of days of bottling but I let them ride for at least 2 weeks.
if it were me, i would pull them out and put them in a cooler and let them go at least a week, checking on them daily. If you start to see any deformation, fridge them ASAP, otherwise, lte them ride until you want to fridge them.
why did you want to carb with honey? it doesnt have a standard sugar level, some honey can be different than others so you may have put in way too much sugar. next time just use something with a known fermentation percentage like table or corn sugar.
