So I got this recipe and brewed it up last night. I did mod it a little to see if I could branch out some. This is only my second batch so I didn't want to go too crazy. I added the entire packet of hops and boiled them with the booster before adding the UME and HME, based off of some of the reviews on mrbeer.com for this recipe. I also added 1 cup of honey rather then 1/2.

I go to look at it today and I can SMELL this beer fermenting. When I did the WCPA that came with the kit nothing fancy really happened during the initial 48 hours of fermentation. This one is completely different. I can smell the release of gas from the LBK and there is a lot of ACTION going on.

So my question is should I let this ferment for three weeks? I'm thinking that with the extra hops and honey I probably want to do more of a 3-3-3 then the 2-2-2 or else the flavor might not balance out. Thoughts?

Ferment til it's done. I can't say whether it will be 2 weeks or 3 but fermentation isn't the time when the flavors start to balance out. That comes from conditioning. Get a hydrometer and check it after two weeks, once your readings are the same for 2 straight days, then bottle.

Sounds good. I know that conditioning is when the flavor balances out hence the 3-3-3 thought.

you'd be better off with a 2-2-4 if you wanted to use the same amount of time and get a better beer. just my opinion though. Most beers are done fermenting in 2 weeks, again, the only way to tell is with a hydrometer.

Excellent! Thanks! Hydrometer is on the list just haven't picked on up yet. As I said this is my 2nd batch so still learning. I'll get one sometime in the next week or so and see how it goes.
