this has been fermenting for a week now, just checked gravity. US-05 is down do 1.017 and the windsor is down to 1.022. Raised temps and shook up the yeast a little so it will finish up. Tasted both samples, the us-05 was clean and let the hops come through, as expected, and the windsor sample was a little fruity and kinda watery. neither had strong mouthfeel so I hope that resolves soon.

i'll let it finish and bottle in a week. I still plan to bottle 2 from each yeast by themselves so i can compare them later.

2 weeks fermenting now, windsor is at 1.018 and us-05 is at 1.015. both samples tasted good, getting a more roasty note out of them now. plan to bottle this saturday.

Indeed! Are you going to bottle all of them separately, or do some blended bottles as well?

Personally, I'd bottle 2/3-ish of each batch straight, and blend 1/3...should give you about 18 bottles of each variety!

2 bottles of each yeast, the rest blended. these are for the wife, she won't care much about the differences between the two yeasts so i'm just doing enough to have 2 head to head tastings later.

Yeah, but what if one or the other ends up WAY better than the blend? Then you'll wish you'd done it differently.

Oh! And you should also do a comparison of blended at bottling vs blended at pouring! That would set you up for a nice head-to-head-to-head-to-head tasting!

DONE!! now I see why most 5 gallon guys keg lol. Got 30 12 oz bottles and a few flip top and 1L bottles. I did 3 each of just one yeast and the rest was all combined. Taste was good, more roasty than nutty and I liked the us-05 sample better than the windsor BUT they both did their job.

the windsor was @ 1.016 and tasted sweeter and muted. the us-05 was @ 1.014 and had noticeable hop bitterness and was more roasty. tried a sample mixed and it was good. not really like moose drool or samuel smiths but still good. lets hope she likes it...cause I have lots of them!!
