SWMBO loves brown ales. In order to keep brewing, gotta keep her happy so I'm brewing one up for her. Should be pretty good.

Chocolate Malt (US) 0.24 lb, Grain, Mashed

Two-row (US) 2.50 lb, Grain, Mashed

Styrian Golding (Slovenia) 1.00 oz, Pellet, 60 minutes
Willamette 1.00 oz, Pellet, 5 minutes

Going to split the batch between 2 LBKs, one with Windsor and one with US-05. I'll combine the two and blend at bottling.

I am thinking about getting some 2 row and replacing the DME, making it an all grain recipe. We'll see how it goes. Also thinking about adding some victory malt, making it a nut brown.

changed it already, i'll grab some victory malt tomorrow. Is 1# too much for this recipe?

YES! I wouldn't go over 4 oz., and Pudge probably wouldn't go over 2 oz. wink

A full pound will be a biscuit bomb! If you haven't gotten the grains yet, you might think about getting Pale Ale malt instead of 2-row, as well as some Pale Chocolate to use instead of the Chocolate.

I'd also consider going with Debittered black or Carafa Special II instead of the Black Patent.

So here's what I'd consider for a grain bill, if you don't have any of the grains yet:

2 lbs, 12 oz Pale Ale Malt (English, if they have it...if not, any will do)
8 oz C-60
4 oz Pale Chocolate Malt
4 oz Victory Malt
2 oz Debittered Black/Carafa Special II

If you already have the grains, just stick with your recipe, but be careful not to overdo the victory malt.

Jon, I do already have the grains. It was a kit from AHS. I changed it to be 1/3# of victory and I am going to stick with the DME rather than getting grain from LHBS. Don't feel like paying nearly $2 a pound for grain.

I'm glad to see Windsor yeast or even the US-05 for this. If you were going to use S-04, I was going to suggest something else. For me, I haven't liked the results using S-04 in a darker beer like a Brown Ale or Stouts...just seems too attentuative...but if you did ever use it, make sure to mash higher to compensate.

i'm kind of hoping the 05 will finish low and the windsor a little higher. mixing the two would make the best of both worlds...the 05 will let the hops and malt shine and the windsor will leave a little sweetness.

Yup, that sounds about right. Never used it, but I know Windsor yeast can get kinda fruity if you let it. It's a true, English yeast for full bodied fruity ales.

yup, hoping mixing the two will even all that out and give me the flavor I want. I do plan to bottle one or two of them before mixing, just so i can see what the differences are. brewing this up tonight, stopping at my LHBS for some Victory and more 2 row.

brewed this up last night. things went great. got good efficiency out of the grains and hit my OG dead on (after adjusting for volume). Those LBKs sure are full!! Added some fermcap to them when adding the yeast. i'll check gravity on these next saturday. They are both sitting at 63* in the ferm fridge and both had nice krausen when I checked this morning.
