Actually, I guess for a Helles anyway... you could go with a clean high AA% hop like Magnum and lower your boil time to 30-45 minutes.

hmmm, I see that working, but I think you gotta stick with a German hop for this beer. call me old school I suppose

you can still get the German ones around here? I thought the Yakima Valley variety is what it commonly available?
but I stand corrected! I had just meant that Hallertau or Tettnang would be my personal hops of choice for this type of beer.

Even the Yakima Magnums are still a German hop, they were developed to be a high alpha version of Hallertau by the German Hop Research Institute. Yakima Magnums are just that hop grown in the Yakima Valley...which may change its characteristics a bit, but it'll still be good for a clean bittering addition.

Well, it went 1.055-1.010 for an apparent attenuation of 81%. Wyeast said 71-75% for that strain. It does depend on the grain bill though even with this being extract. It was mostly base malt so I'd expect it to be at the higher end.

This brew is 2 months old today. It has just started coming around the last couple of days. Before that, I was a little disappointed in this extract version. The AG comes into its own around 5-6 weeks. This one just took a little longer.
