Early in December I brewed up what I called an easy pale ale. It's a decent session beer for summer or when piloting a commercial airliner but the wrong beer for winter. It's too simple and lacks complexity and interest (do I sound like a pompous ass or what).

8.50 lb Pale Ale, Rahr (3.5 SRM) Grain 94.44 %
0.50 lb Caravienne Malt (22.0 SRM) Grain 5.56 %
1.00 oz Cascade [6.10 %] (60 min) Hops 21.8 IBU
1.00 oz Cascade [6.10 %] (20 min) Hops 13.2 IBU
1.00 items Whirlfloc Tablet (Boil 15.0 min) Misc
1 Pkgs Nottingham (Danstar #-) Yeast-Ale

It must either be a four or five gallon recipe if Dane is saying it is a session style beer.

Looks like it needs more hops...maybe a 5-10 minute addition and a dry hop for sure.

And maybe add in another half pound of some medium (40-60 ish) crystal of somekind for some more complexity.

Maybe bump up that Caravienne to a full pound, and switch from Cascades to Amarillo and add in a 5 minute, one minute and dry hop addition. Amarillo are awesome, makes a nice spin on the classic APA. If I did that, I would cut the 60 min addition in half and build up the IBU's with the late hops. Like you said, just because it's easy doesn't mean it can't be tastier.

If you want something new, try some Normy Malt...thats where it's at. (Honey Malt)

not pompous at all Dane; self-aware and constructively critical! 100% how you make the next batch even better.

I'll echo the above...personally, I think you are just a 7 minute hop addition and another 1/2lb of crystal away from a winner. or you could swap out like 2 pounds of the 2 row and use vienna to add a little extra malt depth with some sweet and toasty notes

Yes, definitely needs something in the malt department, hops or both. It is technically good (as in it won't kill you) drinkable beer but it's certainly un-inspiring. I suppose my version of Nat-Lite. My first real swing and miss in a while.

Were you trying to clone some of the beers you've had abroad? Maybe subconsciously? wink
