Mr Malty says that you should use at least 17.25 grams of dry lager yeast (or 1.5 packages of US-23).

I like the idea of a hop beer. Maybe you could try a late malt addition?

Forgot to add the grain bill, sorry about that.

Brewing has gone from something I could enjoyably do by myself in the afternoon, to a super stressful event where I am hoping not to screw anything up/forget anything. I miss my weekday afternoon alone time.

I defenately feel your pain...I hate having to rush or force a brew session anymore so I just don't brew much like I used to. I have a sat night session comming up where I'm brewing at a biddies house with no distractions. That
Wil be the first all grain in a while.

Sounds like heaven.

My previous batch I've labeled Deep Red Husker because my mash temp was 5 degrees higher than I wanted. It was so hectic I didn't even take time for notes. It is definitely more stressful than relaxing, that's for sure.

If you listen to BN podcasts, especially the Sundas Session, Dr. Scott talks a lot about time saving things he does... he has like four kids, runs his own dental practice, and all that stuff that gets in the way... so he's dialed in and shared some time saving tips.

he said something like he puts his water out over night, so it'll be ready for a butt-crack-of-dawn brew session... or, he does it at night and he times it so he can come out of the garage and tuck in his kids and do the dishes during the mash... he can put laundry away during the boil... etc. keeps you busy and constantly moving, but seems like it'll help to keep the pipeline flowing. of course, he has the money to afford a top-of-the-line system, so a lot of stuff might be automatic/automated hahaha

Yeah I usually have my water ready to heat up and ingredients weighed out ready to go the night before. Get all my notes and things ill need handy. That helps me from running around so much. But when the kids are up and crying and getting into shit and everything else...forget about it I don't even try.
