So I am going to brew the MB Shameless Stout recipe this weekend. The basic recipe is

1 can Irish Stout HME
1 can Creamy Brown UME
Booster

I want to replace the booster with 1 lb Extra Dark DME. Do I need a hop addition (maybe a 20 minute boil with .25-.5 oz of some hop)?

I have the following hops on hand:

Cascade
Centennial
Columbus
Palisades
Northern Brewer
Sterling

Also, should I go with S04, S05 or Notty for a yeast (also the only ones I have on hand)

If the recipe was only 1 can of malt with booster I'd say go for it. But this recipe is 2 cans of malt. It is not uncommon for an all grain stout to contain some flaked barley, accomplishing the same thing the booster does in this recipe, add alcohol without adding body. So the recipe can work well as is.

Nothing wrong with tweaking it if you want. I'd suggest subbing the dark DME 1/2-1 lb and a bittering (60 min) hop addition if any.

Thanks. I thought I might tweak it because when I made their oatmeal stout (same two cans w/ 2 cups oatmeal as adjunct) I thought it was a bit thin for a stout. Am I wrong to think that subbing the DME will make for a thicker beer?

You are correct that more malt will make the beer maltier. I'll stand by my suggestion of malt addition with bittering hops.
