Looking for a quick, straightforward IPA to make and have a HME of WWW kicking around and these hops available at my LHBS (slim pickins!) so this is what I came up with:

2G batch

2 lbs. Pale LME
1 can Mr. Beer WWW

.4 oz. of Northern brewer @ 30 mins
.5 oz. Saaz @ 20 mins
Dry hopped with .5 oz of cascade and .5 oz Northern brewer

S-04 yeast (US-05 on hand but leaning towards S-04)

OG - 1.055
FG - 1.016 (i expect it to be lower)
6 SRM
37 IBU
5.2% ABV

Suggestions / comments?

I'll say first that you should always make the beer you want.

Then I'll say the the style guidelines suggest 40 as the LOWEST IBU for an IPA.

Again I'll say make what you want, but to me 37 is a hoppy Pale Ale. Nothing wrong with that.

I'd be thinking that a 60 minute bittering addition to add some IBUs would be a good idea. Late hop as you like.

yeah it is just semantics, but you crafted a 30 min pale ale wink

now if you took 1/4 oz of the cascade and added that at 15 minutes, keeping everything else the same, you are definitely in ipa territory. and 3/4 oz of dry hops in an MB batch isn't shabby at all...

just a little something to consider

Personnally, i would use the US-05 over the S-04. US-05 would be cleaner and accentuate the hops more. You will get more fruity esthers with the S-04...more of an English style.

But it's up to you. Both are great yeast strains and I'm sure you'll be happy with either.

okay a few revisions will be:
.4 oz. of Northern brewer @ 60 mins
.5 oz. Saaz @ 20 mins
.25 cascade @ 15
Dry hopped with .5 oz Northern brewer

43 IBU

and US-05 yeast to compliment the hops.

To echo Big Z about the yeast...the Safale US-05 is known as the "Chico" strain...as in Chico Cali....as in Sierra Nevada Pale is made there. That's why when I make a more hop driven brew I'll use this yeast although I've yet to find a Fermentis yeast I didn't like.

I literally just used S-04 in my last pale ale (which was around 40 IBU), and while I have only sampled it...the yeast seemed to do well. relatively clean finish that allowed both the malts and hop character to emerge. not bad in a pinch.

however, the 05 will definitely let the hops be the star of the show.

Lots of good input already. I think it's a little unusual to use the WWW in an IPA but I do understand that that is what you have on hand. I picked up a few as well at BB&B on clearance with the International Series. I suppose I could try to hide them in an IPA. smile

Or maybe just make a true wheat ale. Something like Blue Moon or Bud Light Wheat. Wait, is Bud Light wheat an ale or a lager?
