So I am making up some graff and I will have 3/4lb of crystal 60 left and .5lb of plain dme and .5lb of amber dme. What can I make, I can get more ingredients, just keep them common as my lhbs is first and foremost a beer/spirits/wine store, they have a decent small selection of hops and grains. I am thinking a chocolate stout would be good.

Also keep in mind that I can only steep, or at least that is all I want to do at the moment.

aside from the plain (I'm assuming golden light?) DME...you've got nothing to get you into chocolate stout land. another 3 pounds of light DME and 2 ounces of hops could get you a solid pale ale though when combined with your C-60 tho!

I am not a fan of pale ales or IPA's either. I can make a trip to the store and pick up different malts and hops. Basically I want a good chocolate beer, or a good beer in general(that isnt a pale ale). Also they only sell hops in 1 oz bags and malts in 1lb bags. So the simpler the recipe the better.

With that being said, I dont know if I have tried a lot of pale ales. I have tried a few IPA's and can say that I am not a hop head. I like balanced or malty beers. So I may like pale ales. I know that I dont particularly like WCPA, but I have only tried it as a standard refill

Okay seems like a pale ale is anything that isnt a dark beer! So I guess it would be hard to say that I dont like pale ales!

Don't feel bad for your preference on beers. I love hops but I'm not big on very bitter Pale Ales and IPAS. But some of the most popular beers of those styles are balanced beers. I tend to build on IBUs by using late hop additions giving you lot of flavor and aroma and only enough bitternes as needed.

How about a sweet stout with or without some cocoa? You can pick up some dark DME and lactose to sweeten it up and very little hops are needed. Maybe a 30 min addition for bittering.

A couple lbs Dark DME, .5 lbs Pale Dme, .5 lb Amber Dme and .25 lbs Crystal 60. A little lactose in the boil and maybe .5 oz or so Willamette, Goldings or Fuggle hops and some Us-05 yeast.

if you've never had an american pale ale, sierra nevada pale ale is one of the best examples of the style out there... and it's available nationally.

i love hoppy pale ales. i hate hop bitterness... and pale ales are high on the flavor and aroma of hops without being high on the bitterness. deschutes mirror pond is great, too... but it's distribution is limited to mostly west of the mississippi (not sure where you are?).

there are a lot of other great examples of pale ales, too... if you've never had one, it'd be worth picking up a few bottles as examples so you know what you're getting into, and if it's worth investing the ingredients and time.

You could also just grab some more dme, a little chocolate malt
maybe some c-120 and an ounce of EK goldings for an english
or dark mild. I wonder if a pound of wheat dme might, might be
good in that?

Now that you're brewing your own beer, twiggy2cents, you need to remember you can always say, "...if I made that beer I'd..." and tweak it any way you please.
A "Pale Ale" is one of the biggest categories AFAIC, and why it was over a year before I brewed one.
But you just create the malt profile you want and hop it the way you want.

Seeing what you got, and assuming you mean a 2+gal batch. Here is my two cents--

.5lb plain DME (assuming you mean Light)
.5lb Amber DME
3/4 lb Crystal 60

Pick up one more pound of DME (Amber or Darker)
Pick up 1/4lb of Chocolate Malt. Crush the grains for steeping.
Pick up an ounce of Fuggles. (1/2 ounce for 30minutes, save the other 1/2 ounce for a future batch)

Voila Porter!
