I'm posting these videos as I make them. I'm brewing the Mac & Jack Amber Clone and will have a step by step video tutorial. The first 2 videos are on making a starter beer. Due to You Tube limitations, the videos must be 10 minutes or shorter so that's why they're chopped. This will take about 5 weeks to complete as we're following this beer from "soup to nuts" or from yeast starter to video pour of the finished product.

Besides Beer, my favorite beverage is green tea. I store my Star San in five Arizona Green Tea Jugs:

(eech, not the Diet, tho!)
It is a 5,

Which means that it is Polypropylene. Which means that it is rugged and unusually resistant to many chemical solvents, bases and acids.
Star San lasts too long and is too pricey for me to even think about dumping it until it is spent!

cool I see you did decide to do a start to finish videos on an all grain brew... smile this will help allot of new brewer that want to get into all grain brewing. I like the hop grenade T-shirt smile I was thinking about doing my first all grain since I have made my MLT 10gal version. I have a recipe in mind for a first all grain brew.

Bee Cave Brewery Haus Pale Ale - All Grain
Recipe Type: All Grain
Yeast: Nottingham
Yeast Starter: Nope
Additional Yeast or Yeast Starter: Nope
Batch Size (Gallons): 5.5
Original Gravity: 1.051
Final Gravity: 1.011
IBU: 39
Boiling Time (Minutes): 60
Color: 5 SRM
Primary Fermentation (# of Days & Temp): 10 Days at 68 degrees

Grain Bill
8 lbs. 2-Row Pale Malt
2 lbs. Vienna Malt
0.5 lb. Crystal 10L Malt

Mash
Single Infusion mash for 60 minutes at 152 degrees.
I batch sparge in a 10 gallon water cooler with a stainless braid manifold. After 60 minutes, add 5 quarts of 175 degree water and begin vorlauf. My system only takes about 2 quarts before it clears up, then it's wide open to drain in the kettle. Have another 3.25 gallons of 175 degree water ready for the next batch sparge. You should then get 6.5 gallons to your kettle for the boil.

Note: this is not my recipe this is just the recipe and instructions that I am going to use for my first all grain brew.

I hear you on the cost. I've thought about that a lot and I've determined that I'd rather pay the price and know for certain that my star-san is still usable.

My question was about making a 1000ml yeast starter in a gallon jug. I was concerned about head space. Doesn't seem to be a problem though...

Yeah, seeing Martin win was awesome. I like consistency from my drivers, thats why I pull for Waltrip, nobody finishes 35th as consistently as him.

yeah, we saw both of his fans yesterday too.

My wife was hammered last April and saw Waltrip signing autographs in his merchandise trailer. Waltrip did not make the field for that race. She said "I guess you don't have anything better to do since you didn't make the race."

I met him a couple years ago at a NAPA opening, he was nice to my kids, that's probably why I like him.

A couple of follow up questions to your video:

At dough in, your strike water is already in the mash tun, right? Is that water heated to boiling and then cooled to strike temp or just heated to temp? (I think you said 170, I'll have to go back and take notes.)

Why draw off the "first runnings"? What happens to that wort?

Did you buy that Lowe's cooler you used to sparge like that or is it modified? What section of the store is that thing in? I've never seen anything like that at he hardware store.

The Lowe's cooler was modified. There are many tutorials out there for that mod. I think ResQ actually has his instructional video on his mash tun post.

The vorlauf (drawing off that first wort) is put back into the mash. Thaty's only to ensure that we have runnings that are free of husks, etc. When you first start "running" the grain bed compacts into its own filter. Once you get to the point of no husks in your runnings, you can let it run into the boil kettle.

I cut that part out of the video cause my daughter had come out being loud and I was telling her to go inside. I didn't need that in the video. smile

For the Strike water, yes it is already in the mash tun. FOR MY SYSTEM (everyone needs to figure out what works for them), if I put some boiling water in the tun first AND THEN DUMP IT (I didn't film that part either), I can heat my strke water to about 11° higher than I want my mash. So: I boil about 3 quarts of water, put it in the tun, dump the water out of the tun before adding strike water. Heat strike water up to 11° higher than my mash temp, dump THAT water into the tun, dough in, stir well, and take the temp. This works well for my setup.

I also preheat my mash tun with hot water. I then heat strike water which is a pre-measured amount to a pre-determined temp.

I use Promash. I click on Strike Temp and set my Mash Tun Thermal Mass to zero since it is preheated. Entering the other info from there gives me water amount, strike temp, and total mash volume. That's handy since I have a 5 gallon Lowes cooler and tend to push that 5 gallon limit at times.

looks good man! I think your right, I will just have to sanitize and get a screen or maybe just use leaf hops! i am brewing tomorrow with leafs (my first time). I heard you also get better aroma and flavor out of leafs, but you need just a tad more than you would with pelletts!

Drew a sample last night. I hope it conditions out well. As of now, it's a rather bland beer. I'm only getting a little biscuit from the MO and some citrus from the cascades. No real complexity, IMO.

Great videos! Thank you for the work you put into educating the forum (me).

I'm up to the beer's a day old in the fermentor. It's good to see how relativley simple it is. My mind was spinning because I have been reading so much about PH, protein rests, what this temp mash does vs that, different ways of sparging... I am glad to see that can mash without babysitting the mash temperature to hold it dead on. Puting it into the cooler and setting a timer is pretty simple.

BNB: You've gotta get some XM/Sirius in your garage for brew day. Those commercials on the radio are annoying.

Well, I'm glad I can help someone. If I can't share the knowledge I've gained from this and other sites, what good is it?

AG is a fairly simple process. I'm starting to REALLY study my water now as this can make an even greater impact in quality. I've learned that my amber to darker beers are outstanding but my pale beers are less than perfect. Just at the point of drinkable, really. I think my water has a lot to do with that. So, for my Belgian Tripel, I will be playing with my water profile a little.

I stir the mash a couple times throughout. I do not worry about temp at all because of the density of the mash. The temp really is not going anywhere over the hour.

The radio barely gets attention paid to it at all. It's just for ambient noise, really.

The commercials are on the Clear Channel rebroadcasts and talk channels. The actual SiriusXM music channels are commercial free. I also like that on many of the channels the music is unedited so you can hear is like it was intended.

Well if you really want commercial free unedited music, just use Pandora or Slacker internet radio. Plus you get to play DJ too and pick the songs you want to here.

Not sure what this has to do with beer, but I know I like listening to music while brewing!

Wow, I've never heard of anyone doing that. Doesn't your mash temp drop a lot? Most brewers mix thoroughly up front to insure there's no dough balls, take a pH reading, and button it up for the duration. I know I never see more than a 2 degree drop over a 60 minute mash.

You've seriously never heard of anyone stirring their mash? Wow to that. Perhaps you should interview more brewers. Seems as though there are even motors used to stir the mash. Do a search in your HBT. There are even threads about building them and how to do it "correctly." Look under the DIY thread. There's a lot to learn in there.

No, my temp stays put. The mash is too thick for the short amount of time I spend stirring to affect it.

Sorry if I raised your ire Butterbean.

I'm of course fully aware of mechanized stirrers, but that's a different kettle of fish entirely as there's obviously no heat loss incurred. I know from significant experience that I can consistently drop the temp of a 6lb grist with 2:1 ratio by 2 deg per minute with vigorous stirring.

HBT isn't mine, BTW. I'm just a member there...

oh, I heard that by stirring your mash in small coolers (as opposed to the self stirring giants) you run the risk of compressing your grist and releasing tannins and bitter off flavors

I am making consistently great beers and have feedback from experienced AG brewers to back it up. I certainly still have many questions and I delve into those topics as they come up.

I do not stir vigorously. Just enough to "make sure." I only lost 2° in my 90 minute mash last week for my IPA. For a 60 minute mash, I usually lose nothing when I pre-heat the tun but if I do, it's a degree. I am brewing in 90-100° weather though.

I didn't mean anything by the "your" comment. Just wrote it that way.

I assure you I was never questioning the quality of your beers; I've never drank one! I've now taken a bronze and two gold medals with mine so I know I'm at least making beers that please BJCP judges. smile

I suspect ambient temp makes all the difference. Here in CO we're barely into Spring so we're brewing in 60-70s. I've also been running some relatively strict multi-step mashes where temp control is critical. I simply can't afford the risk of opening the MLT.

I see a nice upgrade in there, jkarp. Trying to do strict multi-step mashes in a tun with the potential to lose 2 degrees a minute could be a chore.

Congrats to your BJCP success, jkarp!!! I would enter comps but I haven't figured the BEST way to bottle from the keg. Sure, I know about beer guns and CPF's. I just haven't gone there yet.

Ambient temp and relative humidity differential between CO and AZ are undoubtedly different. Perhaps that makes the difference in my confidence in stirring and your hesitation to do so.

Here's the deal: I stir like hell at dough in to ensure there are no doughballs. But what if there are and I'm just not finding them? The research at UC Davis indicates that actual conversion happens in 20 minutes or so. If I stir every 20 minutes without losing temp, I can only see benefit. If I do lose temp then maybe there's an issue but I haven't encountered that yet.

Again, congrats on your medals. I want to do that soon, too. The closest I've come is an unofficial judging from a guy I met on the brewing network forum who is a BJCP judge. He thought my Ordinary Bitter was outstanding.

I have a keggle I still haven't used. So far, I've only had 2 or 3 boilovers. I have thus far been able to control the flame enough to manage the break.

I have 3 kegs in the process of being converted (for a 3-tier system)... Once they're setup, I think it's all I will use!

A good friend of mine usually brings his stuff to my house and brews with me. He uses a keggle and the boil always looks absolutely even and well maintained. Not much adjustment happening with the flame during the boil.

I haven't used mine yet because I've been to cheap to build a new chiller.

hey matty,

where did you pick up your kegs? i've had my eyes on a few listed on ebay but would like to find another source.

what are you using to build your stand? I am probably going to use strut.
