I like The Reverend a lot, and found a recipe for it online--Avery reuses the yeast from The Reverend, i'e'; Wyeast 3787--but I tried Avery Salvation later and I like that better, but cannot find an online clone/recipe for it.

Hey Gunny! Long time no read!

What type of clone are you looking for ~extract, extract with Steeping, All Grain?

SALVATION:
Beer Style: Belgian Strong Golden Ale
Hop Variety: Styrian Goldings
Malt Variety: Two-row barley, cara 8, cara 20
OG: 1.080   ABV: 9.0%   IBUs: 25
Color: Golden

Avery is about 40 blocks from my home. Adam Avery is super friendly and very willing to help out the Home Brew scene (I have a buddy that regularly goes to the brewery to snag their house yeast), maybe shoot Adam an email asking for tips on a clone.

Here is the recipe I have for Avery's "The Reverend"...

...for which I suspect is the same/similar for "Salvation" except scaled down in the specialty grains department, but who knows... I guess it's an extract/steeping recipe, although it also calls for a sparging of the specialty grains after steeping.

It also calls for Belgian Candi Sugar. I see Randy Mosher (Radical Brewing)now says the Belgian Candi is a waste of money as plain white or beet sugar (boiled to crystalize) will have the same effects. But the Salvation label itself from Avery indicates they still use it.

I discovered Avery beers in a place called "Mellow Mushroom" here on the sandbar and had a "The Rev" since they were out of my first choice that day, Salvation. Great pizza too.

I was impressed w/TR. I had never tried a Belgian b4. Up to then I was happy when I get up to Atlanta every few months and loaded up at Tower Liquors with Dogfish and Rogue, etc.

Belgian Candi Sugar is just inverted sugar and easy enough to do at home. I would be sure to use Beet Sugar, not Cane. They do not have Cane Sugar in Europe that I know of.

There are those that will also argue that there is no need to invert it as the PH and heat of the wort will do the job. I have never really gotten behind that theory.

Here is about all I know about invert sugar. Sucrose is a compound sugar composed of glucose and fructose. Invert sugar is sucrose that has been hydrolyzed. Honey is largely composed of invert sugar. Addition of an acid and elevated temperatures speed up the hydrolytic inversion. The fructose is "inverted" by the hydrolysis and refracts polarized light. Since yeast needs to excrete the enzyme invertase to absorb sucrose from solution, theoretically invert sugar is easier to ferment that sucrose. I say theoretically because there doesn't seem to have been a lot of research published about the subject. At the January club meeting, there was some discussion about inversion in a normal wort boil, and the best hypothesis goes to Steve Lefebvre that because wort is acidic, there must be some inversion of sucrose in the wort boil. Logically, that would seem to be the case, but I know of nothing in the literature to prove it. What I did find out is that inversion is neither instantaneous nor total. I found reference to a sucrose solution at pH 5.0 held at 175ºF inverting only 13% of the sucrose after 6 hours. Another reference gave four to six days for inversion without the addition of acid. The amount of inversion in a wort boil is probably negligible.
